Let's start with the preparation of the liver, which needs to be washed, dried, removed from the films and cut into large pieces. You also need to prepare the mushrooms in advance: rinse, dry and cut coarsely, pour boiling water for 15-20 seconds.

Next, you need to prepare a breading mixture: mix corn flour with salt, paprika and fenugreek. Roll the prepared pieces of liver in the breadcrumb mixture and fry on both sides in a preheated frying pan in olive oil for 2-3 minutes. The frying oil is pre-flavored with garlic (garlic cloves are crushed with a knife blade and fried in a frying pan until browned, then they are thrown away).

Remove the liver from the pan and put the chopped leeks and onions in half rings, add the prepared mushrooms, water to it and cook under the lid for 15-25 minutes. Pour sour cream, a little water into the half-cooked mushrooms and, after the sauce boils, add the fried liver to the pan.

Mix everything carefully, pepper, salt if necessary. Bring all the ingredients to a boil, and then turn off the heat. Fried rabbit liver is ready!

Serve the finished dish hot with herbs and your favorite side dish. Boiled rice is well suited to this dish.
